By essential oil we mean a complex mixture of organic compounds coming from aromatic plants, chemically characterized by the class of terpenoids, but also including other compounds, in particular phenolic ethers, nitrogenous compounds, sulfur-containing compounds, etc. The terpenoids present in essential oils are usually monoterpenoids and sesquiterpenoids, and in rare cases diterpenoids, and usually constitute the largest percentage of the essential oil.
