Burdock is a very common plant whose fresh leaves are used in cooking in spring. The root is used in herbal medicine as a purifier (especially for its action on the skin), diuretic, hypoglycemic and choleretic. Burdock is also a rich source of inulin, a soluble fiber which has a prebiotic action and improves the intestinal bacterial flora.
